• Le Contrade line by Crifo has a new label, a tribute to the Apulian Murgia.

    We are tied to our territory by the love for tradition and we are committed to enhancing our cultural heritage. Inspired by this spirit, we present the new labels of four contemporary wines, which were born among the dry stone walls of our districts.

    Le Contrade line was conceived with the precise purpose of telling particular “wine anecdotes” of our terroir. Starting from grapes perhaps little known with reference to Alta Murgia, vinified by alternating traditional and modern techniques, we obtain wines that can tell something new and surprising about our “slice of Puglia”.

    Squarcione Appassimento Rosso Puglia IGP from Apulian autochthonous grape varieties;

    Le Carrare Primitivo Puglia IGP 100% from Primitivo grapes;

    Bellagriffi Moscatello Selvatico Puglia IGP 100% from Moscatello Selvatico grapes;

    Le Matine Fiano IGP 100% from Fiano grapes.

    The restyling of Le Contrade line is inspired by a suggestive scenario: the paths marked by rows of dry walls that “draw” our districts, rural areas with curious names that every day are traveled by workers, inhabitants of the large farms, tourists and lovers of outdoor walks.

    The dry stone walls are a living expression of the harmonious bond that has existed for centuries between man and nature, an integral part of the traditions of our rural communities and UNESCO heritage since 2018.

    The dry stone walls, composed of stones arranged on top of each other (without the use of any binder), were built to delimit the land, properties, roads, drove roads or terraces. The dry architecture still practiced and handed down, is the identity of the landscape of the Murgia; from the walls derive other typical and peculiar structures such as the so-called caseddi or pagghiari, which were used as shelter, refuge or storage. In turn from these have come to life the most famous trulli.

    Le Contrade holds all the flavor of rural tradition, all the flavor of our beloved Puglia whose lands we cultivate and respect with careful and thoughtful work since 1960.

    Wine and Cooking: ricotta and cocoa Bundt cake

    The Bundt cake is a traditional ring-shaped dessert, which was born in 1966, when the american housewife Ella Elfrich won the second place at the Bake-Off competition with the Tunnel of Fudge Cake. Since then, this cake spices up our houses and conquers our hearts.

    The ricotta and cocoa Bundt cake by Chef Eleonora Corvasce of Il Cantuccio di Romeo is a soft and delicious cuddle to enjoy both at breakfast and after dinner, to enjoy a moment of absolute sweetness.

    Two suggestions:

    1. to make it even more delicious and irresistible, spread on your slice a thin layer of jam or dark chocolate cream;

    2. the Sommelier Mario Sinisi recommends to accompany the Bundt cake with our Moscatello Selvatico Vendemmia Tardiva Puglia IGP, that will exalt every note of the dessert.

    Let’s get to work!

    INGREDIENTS FOR THE CROWN BUNDT MOULD (10 CUPS)

    • Flour 00 for cakes – 375 g
    • Bitter cocoa powder – 60 g
    • Cow’s milk ricotta – 375 g
    • Light brown sugar – 225 g
    • Milk – 45 ml
    • Apricot jam – 150 g
    • Sunflower seed oil – 220 ml
    • Eggs at room temperature – 150 g
    • Baking powder – 24 g
    • Seeds of 1 vanilla berry

    PROCEDURE

    Preheat the oven to 180 ºC in static mode; sprinkle the mould with the peeling spray and,

    with a brush, make sure it penetrates into every crack.

    With the help of the stand mixer, whisk the ricotta with the brown sugar until you obtain a homogeneous mixture. At this point, add the eggs, one at a time, the apricots jam, milk and oil. Mix well to make everything as homogeneous as possible. Sift the flour with cocoa and yeast and add the powders to the ricotta mixture, one tablespoon at a time. Mix well until the mixture is homogeneous; pour it into the mold and bake.

    Cook for 50-55 minutes.

    Before removing the Bundt cake from the oven, verify the cooking by making the toothpick test: if you insert it up to the heart and it comes out clean, then the cake is ready.

    Remove from the oven and let cool for 15 minutes before removing the cake from the mould.

    Your delight is ready to be enjoyed together with an excellent glass of Crifo wine!

    The long-lasting great commitment, that the cooperative winery Cantina di Ruvo di Puglia expresses in the field of sustainability, has been rewarded by the certification of “Sustainable Winery”, according to the international standard EQUALITAS SOPD, awarded by the DNV Qualified Certification Body.

    What is Equalitas certification

    The Equalitas is a Certification of Sustainability evaluated on an ethical-social, environmental and economic scale, following a severe path of adjustments and verifications, carried out over the past six months, under the supervision of the independent body DNV. The “founders” of the initiative are: Federdoc (the Confederation of Consortia for the protection of the Italian wine DOC), Csqa Certificazioni and Valoritalia (two of the leading organizations for the certifications in the wine sector), Gambero Rosso Foundation, 3A Vino.

    What Equalitas Certification means for our cooperative winery

    For Cantina di Ruvo di Puglia the sustainability is a value to believe in and for which it’s worth to work seriously, but above all a way of making a cooperative.

    Sustainable products only come from a sustainable Company, attentive to its workers, to the impact on the environment and to the relations with the territory, since today’s consumers make their own purchasing and consumption choices in an increasingly conscious way.

    The principles of the sustainability concept are the protection and safeguard of the territory, the careful control of resources and respect for fundamental human rights . This finds expression in every step of our supply chain, from the correct management of crops to distribution, through harvesting, vinification and bottling. Tradition and innovation firmly intertwines to address the next generations and guarantee them a future that is undoubtedly better and indisputably sustainable.

    A sustainable winery future-oriented

    The main goals we aim to reach every single day are to face the environmental challenges and carry out the most advanced solutions in order to reduce to lower terms the impact of the cooperative on the territory. It is necessary to ensure a safe working environment for the members, workers and suppliers, keeping a transparent and sound relationship of coexistence between the winery and the local community. We commit ourselves to respect all these principles with determination and perseverance.

    The Certification is only the confirmation of a path that goes towards the right direction, sometimes uphill, that recognizes Cantina di Ruvo di Puglia as a Sustainable Winery, according to standards that reflect the sensitivity now widespread internationally, and motivates us to do better in terms of environmental health and social welfare.

    Every year the achieved goals will be shared in a transparent way, through the drafting of a specific Sustainability Report, which can be consulted by all stakeholders.
