Our culinary journey could only begin in Ruvo, where RistorArte Upepidde shines like a precious gem in the culinary firmament of the area. Elected Bib Gourmand restaurant by the Michelin Guide Italy 2020, it finds its place within the Aragonese walls of the city dating back to the 16th century.
Led by Dino Saulle, a renowned wine expert and taster, alongside chef Simone Coviello, with his dishes inspired by the Alta Murgia region.
Let’s discover together the tasting menu chosen for you:
To start things off, we have the “Nero di Troia Terre del Crifo” paired with an egg foam with a soft yolk and black bread croutons on a delicate 24-month parmesan base and fresh truffle wafers.
For the first course, we pair Pansotti with smoked ham, parmesan sails, shredded meat on a bed of yellow pumpkin and balsamic with our “Castel del Monte Rosso Terre del Crifo” with its bold character.
The king of our cellar, “l’Augustale Nero di Troia Riserva Docg”, pairs well with flavorful pistachio-crusted lamb ribs in aromatic sauce, mashed potatoes and vincotto, as well as a succulent entrecote in royal truffle sauce, pink berries, warm yellow peppers, and tarallo crumbs.
To elevate the experience, the “Squarcione” will be accompanied by a trio of locally produced aged cheeses.
To conclude, the “Cryfus Moscato” pairs either with Tiramisu in a glass with coffee cream or a Pistachio semifreddo with chocolate shavings and caramel cream.
