The Charmat method: freshness and fruity character
Most of Crifo’s sparkling wines are produced with the Charmat Method (or Martinotti), an approach that emphasizes the freshness and fruity expression of the grape variety. This method involves a second fermentation in large pressurized tanks (autoclaves), where the wine develops its bubbles before bottling. This process preserves the primary aromas of the grapes, resulting in lively, aromatic, and often more accessible sparkling wines. The grape varieties mainly used for these sparkling wines include the Bombino Bianco for whites, Bombino Nero for rosés, and Moscato for the sweet version.

Extra Dry Sparkling Wines
This type represents the majority of Crifo’s Charmat offering, including wines from the Sixty Edition and Easy lines. These sparkling wines are characterized by a dry taste, but with a softness given by a slight residual sugar that makes them particularly harmonious and balanced. They are ideal as an aperitif or paired with fish and shellfish dishes, offering pleasant freshness and lively perlage. The grape varieties used, such as Bombino Bianco and Bombino Nero, contribute to intense aromas with fruity and floral notes.
Sweet Sparkling Wines
Crifo’s sweet offering is represented by the CRYFUS Moscato Puglia IGP Sweet Sparkling Wine, made with pure Moscato grapes. This sparkling wine is distinguished by its aromatic and intense fragrance, with typical varietal scents. On the palate, it is sweet but balanced by the right acidity, making it harmonious and not cloying. It is an ideal wine to accompany desserts, dry pastries, and fruit-based sweets, offering a rich and enveloping taste experience.
Classic Method Sparkling Wine: tradition and elegance
Although the focus is on Charmat, Crifo includes in its portfolio a single but significant expression of Classic Method: the Cryfus Anniversario Classic Method Pas Dosè. This wine, made with pure Bombino Bianco, follows the traditional method with bottle refermentation, giving it a fine and persistent perlage, greater aromatic complexity, and a more pronounced structure. The term “Pas Dosè” indicates the absence of added sugars after disgorgement, resulting in an extremely dry and pure wine ideal for connoisseurs.
