The grapes, freshly harvested, are cooled and remain in contact with the skins for 4 to 6 hours to extract aromas and color. They are then gently pressed, and the obtained must is decanted and filtered before being brought to a temperature of zero degrees Celsius. It is then placed in an autoclave where it undergoes a single fermentation. It stays on the lees for 60 to 90 days before moving to isobaric bottling.
Bright rose petals veil the glass. The lively effervescence recalls fragrant wild strawberries, raspberry, and pomegranate. The structure is cheerful and the freshness is rich. It finishes with an almond candy note.
