Cryfus Anniversary Classic Method Pas Dosè
The Cryfus Anniversario Classic Method Pas Dosè is a Classic Method sparkling wine considered ideal for important occasions. It is made from pure Bombino Bianco grapes, from the Murgia hills, northwest of Ruvo di Puglia, with vines trained on spurred cordon (4,500 plants/hectare). Harvesting takes place in mid-September.
Vinification
The winemaking process follows the Classic Method: the grapes are immediately brought to the winery and destemmed, then cooled to 10°C. A brief maceration in the press for 4-6 hours follows to extract aromas from the skins. The free-run juice is collected for fermentation in steel at 15°C. In spring, the wine is bottled with the addition of liqueur de tirage for the second fermentation in the bottle, which creates the characteristic bubbles. The bottles undergo periodic remuage to settle the yeasts.
After 24 months, the sparkling wine is disgorged and definitively corked, then left to rest in the bottle for a few months before commercialization. The Pas Dosè classification (zero dosage), combined with 24 months of aging on the lees in the bottle, highlights Crifo’s commitment to producing a high-quality Classic Method, focused on the pure expression of the terroir and the Bombino Bianco grape variety. The absence of added sugars post-disgorgement attributes the impeccable quality of the base wine and a prolonged aging to achieve balance and complexity appreciated by sophisticated palates.
