The grapes, harvested by hand, are taken to the winery and undergo destemming and crushing. Vinification is carried out using the Kryos, following the reduction technique. The system receives the crushed grapes, lowers the temperature to about 10°C, completely removes dissolved oxygen, saturates it with CO2, and transfers it to the next processing stage. The grapes in the press then undergo a brief maceration for 4/6 hours to extract the aromas from the skins. The free-run juice is collected for fermentation in steel at 15°C. The wine ages for 30 days on the lees before bottling. Throughout the production process, the must and wine are protected from air contact until bottling, reducing the use of sulfur dioxide and enhancing all the aromas and flavors.
The visual impact is delicate and elegant, while on the nose, the intensity and complex structure of this wine burst forth, rich in aromas reminiscent of fresh red berries. On the palate, it does not disappoint: the bold notes of crisp fresh fruit, grapefruit, and passion fruit persist. Pleasantly acidic, it reveals a subtle savory note in the finish.
