The production regulations for Castel del Monte Doc feature a long list of types named after the grape variety used. The Castel del Monte Dop designation, effective since 2010, is valid at the European level and guarantees products intended for export.
The production of Doc Castel del Monte wines is allowed only in the province of Barletta-Andria-Trani and the metropolitan city of Bari.

- Terre del Crifo Dop Red 12.5% vol. A blend of Nero di Troia and other noble and appreciated native grape varieties from the vineyards surrounding Castel del Monte.
- Terre del Crifo Castel del Monte Bombino DOP White 11.5% vol. Pure Bombino Bianco that retains the savory and mineral flavor of the sea breeze blowing from the Adriatic, from the hills of the Murgia, around Ruvo di Puglia.
