The Ruvo di Puglia Winery is the first in the region to have a Kryos system for reductive winemaking.
Reductive winemaking is a complex and very modern technique that allows the preservation of the varietal aromas of selected grapes, resulting in even more intense and fragrant white and rosé wines.
How? By preventing the oxidation of the wine.
The goal of reductive winemaking is to avoid contact between the must and the wine with oxygen during all production stages, up to bottling. Technically, the temperature of the crushed grapes is lowered to about 18°C, dissolved oxygen is completely removed, and the atmosphere is saturated with CO2. The addition of gases like nitrogen or carbon dioxide forms a protective layer on the wine and, in the absence of oxygen, allows for better aroma extraction while also limiting, if not eliminating, the use of sulfur dioxide (in other words, sulfites, whose purpose is to protect the wine from oxidation damage).
This way, the wine only encounters oxygen when the bottle is opened.
Already widespread in France, reductive winemaking has thus been introduced in Puglia by the Ruvo di Puglia Winery. This achievement demonstrates the members’ commitment to keeping the values of ancient winemaking traditions alive while keeping pace with progress, considering innovations in winemaking techniques, and adhering to sustainability principles.
