The grapes, harvested by hand, are transferred to the winery and undergo destemming and crushing. Vinification takes place in complete reduction using the Kryos system, which allows dosing amounts of CO2 to eliminate dissolved oxygen and lower the temperature to 10°. The grapes in the press then undergo a short maceration for 4/6 hours to favor the extraction of aroma precursors from the skins. The free-run must is collected, then clarified and fermented in steel at 15°. The wine ages for 30 days on the lees before being bottled. Throughout the production process, must and wine are protected from air contact until bottling, reducing the use of sulfur dioxide and enhancing all aromas and flavors.
A straw yellow wine with greenish reflections that captivates the nose with its herbaceous and delicately floral scents. Delicate field chamomile harmoniously blends with the citrus notes of bergamot. The pleasant memory of fresh fruit unfolds at the finish. On the palate, it confirms intensity and freshness, supported by a dry flavor.
