The grapes, strictly hand-picked and selected, are transferred to the winery for destemming, protected from oxygen contact by the addition of CO2. Once they reach the press, they rest for about 2 hours at a controlled temperature of about 15°C to promote the extraction of aroma precursors from the skins. After a gentle pressing, from which the free-run juice is obtained, the product is decanted into stainless steel tanks. This is followed by fermentation, conducted at about 14°C, and fermentation in barrels at a controlled temperature. The resulting wine is then aged on fine lees, which are stirred into the mass every 48/72 hours using the bâtonnage technique, promoting the release of natural mannoproteins from the skins, giving the wine more stability and greater taste/olfactory complexity.
This straw-yellow wine in the glass reflects an intense golden shimmer. The nose is immediately intoxicated by hints of exotic fruit, with pineapple leading, followed by yellow peach. At the finish, aromas of white fruit, apple, jasmine, and slightly vanilla notes unfold. On the palate, it is balanced, fresh, and elegant.
