Native black grape varieties.
Contrada Squarcione, in the countryside of Ruvo di Puglia.
Spurred cordon with a density of 4,000 vines per hectare.
On-vine drying until mid-November.
The grapes, left to dry on the vine, are brought to the cellar for cluster selection and subsequent destemming and crushing. A pre-fermentation maceration is carried out at 12°C, then the must is left to ferment in steel for 10/15 days at 23°C. It is then gently pressed. Malolactic fermentation takes place in steel. The wine is aged for 12 months in wood, partly in second-use French and American barriques and partly in large 80hl barrels. After bottling, it spends another 6 months in glass before being marketed.
Deep and concentrated ruby red color. The wide and complex olfactory range evolves pleasantly in the glass. From ripe fruit to jam, from red rose to withered violet. On the palate, it is round and seductive, with noble tannins, and the vitality of freshness following the taste tells the story of the terroir to which this wine belongs.
