First decade of September.
The grapes, harvested manually, are brought to the winery and, after careful selection of the bunches, undergo destemming and crushing. Maceration is then carried out at a temperature of 25°C for about 8 days. After racking, the wine undergoes a fine alcoholic fermentation in steel, followed by malolactic fermentation, then moves on to aging and bottling.
Its typical color is intense ruby red. The nose highlights the lively characteristic aromas of black cherry, cherry, and iris, supported by secondary notes of tomato leaf and dried herbs. The tannic texture, both bold and silky, and the acidity give this wine a balanced nature.
