The grapes are harvested and immediately taken to the winery for gentle pressing. The must is then cooled and kept at a low temperature for a few hours. Once clarified, it is fermented with selected yeasts in stainless steel tanks at a temperature of 16°C. The subsequent aging of the wine continues in steel until the bottling stage.
