The grapes, harvested manually and placed in baskets, are inserted intact into the macerator, and then sent for intracellular fermentation at a controlled temperature of approximately 15°C. The whole bunches remain in maceration for approximately 15 days, promoting the development of intracellular maceration and the natural extraction of characteristic fruity scents and aromas. At the end of the maceration, the wine is racked and transferred to a temperature-controlled winemaking tank, where it completes the alcoholic fermentation. The process is held with particular attention to preserving the freshness, aromatic fragrance and typical immediacy of Novello wine
In the glass, its ruby red color has bright reflections. It is fresh, fragrant, with particular clear fruity notes of raspberry, currant, and cherry. The fruity aromatic trousseau is supported by very slight floral hints. Typical is its softness and harmony of taste. Free from harshness, it is appreciated for its clean finish.
