The grapes, freshly harvested from vineyards over 30 years old, are brought to the winery for careful selection of the bunches and subsequent destemming. A pre-fermentation maceration at 12° is then carried out, followed by fermentation in steel for 10/15 days at 23°. It is then gently pressed and malolactic fermentation takes place in steel. The wine is aged for 12 months in wood, partly in second-passage barriques and partly in large 80hl barrels. After bottling, it spends another 6 months in glass before being marketed.
Deep, impenetrable ruby red color. Its exuberant character reveals an unparalleled olfactory intensity. Red roses and potpourri, spirit-soaked fruit and boero, cloves, cinnamon and cinchona, menthol and aromatic tobacco. On the palate, alcohol and the velvety tannin texture balance an intense freshness, a key for a long life in the bottle. It closes long on balsamic and toasted notes.
