The Elite of Crifo DOCG Wines from Puglia – Castel del Monte
The production area for DOCG wines is defined with extreme precision. It includes the entire municipal territory of Minervino Murge and parts of the municipalities of Andria, Corato, Trani, Ruvo, Terlizzi, Bitonto, Palo del Colle, Toritto, and the administrative island D’Ameli of the municipality of Binetto. The production rules for these flagship wines are rigorous:
- For the Castel del Monte Rosso Riserva DOCG, a minimum of 65% Nero di Troia grapes is required, with the possibility of adding up to 35% of other non-aromatic black grapes suitable for cultivation in Central Murgia. A minimum aging period of two years is mandatory starting from November 1st of the year of grape production, with at least one year in wood. The maximum grape production is limited to 10 tons per hectare.
For the Castel del Monte Bombino Nero DOCG, a minimum of 90% Bombino Nero is required. Although no minimum aging is specified, the residual sugar must not exceed 10 g/l.

The harvest, which takes place at the end of October, ensures optimal phenolic ripeness. Its organoleptic characteristics are complex: a deep ruby red with garnet reflections that develop with aging, intense aromas of red fruits and spices, evolving into elegant balsamic and toasted notes, culminating in a long and persistent finish. It pairs beautifully with robust dishes such as cavatelli with lamb ragù, tripe with potatoes, horse meat rolls in sauce, or baked sausage with cherry tomatoes.
