Our culinary journey could only start from Ruvo di Puglia, where Upepidde RistorArte shines as a precious gem in the culinary firmament of the territory. Elected “Bib Gourmand” restaurant by Michelin Guide Italy 2020, it is located within the Aragonese walls dating back to the sixteenth century.
Upepidde RistorArte is directed by Dino Saulle, a well-known expert and wine taster, alongside with chef Simone Coviello whose dishes are inspired by the territory of Alta Murgia.

To open the dance is the “Nero di Troia Terre del Crifo” together with an egg foam with melting yolk and black bread croutons on a delicate mousse of 24 month parmesan cheese and fresh truffle wafers.
As the first course they pair Pansotti with smoked ham, parmesan sails and shredded meat on a mirror of yellow pumpkin and balsamic vinegar, with the decisive character of “Castel del Monte Rosso Terre del Crifo”.
The king of our cellar, “Augustale Nero di Troia Riserva Docg”, is served with tasty lamb ribs with pistachios in aromatic sauce, mashed potatoes and vincotto, otherwise with a succulent entrecote in real truffle sauce, pink berries, hot yellows and tarallo crumbs.
The “Squarcione”, to sublimate the experience, is accompanied by a triptych of locally produced aged cheeses.
At the end the “Cryfus Moscato” is served with either an in glass tiramisù with coffee cream or a pistachio and chocolate shavings parfait with toffee cream.
