The <\/span>ricotta and cocoa Bundt cake <\/span>by Chef Eleonora Corvasce from <\/span>Il Cantuccio di Romeo<\/span><\/i> is a soft and delicious treat to enjoy both at breakfast and after <\/span>dinner for a moment of pure sweetness.<\/span> <\/p>\n

    • Milk \u2013 45 ml<\/span><\/li>\n
    • Apricot jam \u2013 150 g<\/span><\/li>\n
    • Sunflower seed oil \u2013 220 ml<\/span><\/li>\n
    • Eggs at room temperature \u2013 150 g<\/span><\/li>\n
    • Baking powder \u2013 24 g<\/span><\/li>\n
    • Seeds from 1 vanilla bean<\/span><\/li>\n<\/ul>\n

      METHOD<\/span><\/p>\n

      Preheat the oven to 180\u00b0C in static mode; treat the pan with release spray and <\/span>use a brush to ensure it reaches every crevice.<\/span><\/p>\n

      Using a stand mixer, work the ricotta with the brown sugar with the whisk until you have a smooth mixture. At this point, add the eggs one at a time, the apricot jam, milk, and oil. Mix well to make everything as smooth as possible. Sift the flour with the cocoa and baking powder and add the dry ingredients to the ricotta mixture one spoonful at a time.       Before removing the bundt cake from the oven, check the doneness with the toothpick test: if <\/span>it comes out clean when inserted into the center, the cake is done.<\/span><\/p>\n

      Remove from the oven and let cool for 15 minutes before removing the cake from the pan.
